Servings: 4-5

Prep Time: 25 minutes

Total Time: 50 minutes

Ingredients:

  • Teriyaki Sauce:

    • 1 cup Low Sodium Soy Sauce

    • 1/2 cup Water

    • 4 tbsp Red Wine Vinegar

    • 2 tbsp Brown Sugar

    • 2 tbsp Granulated Sugar

    • 1 tbsp Minced Garlic

    • 2 tsp Ground Ginger or Ginger Paste (I prefer and use Ginger Paste.)

    • 1 tbsp Cornstarch

    • 2 tbsp Warm Water

    • 2 Green Onions minced (for garnish)

  • Ground Turkey Mixture:

    • 2 tbsp EVOO

    • 1 diced Onion

    • 2 tbsp Minced Garlic

    • 1 pound Ground Turkey

    • 1 cup finely chopped Broccoli

    • 2 large Carrots peeled and grated

    • 1 finely diced Red Bell Pepper

  • Coconut Rice

    • 1 15 oz can Unsweetened Coconut Milk

    • 1 1/2 cups Chicken or Turkey Broth (may need more to add to pot depending on elevation)

    • 2 cups Long Grain White Rice

    • 2 tbsp Butter

    • Seasonings of your choice

Instructions:

  1. Soak rice in a bowl for 1 hour with several water changes before cooking. The water should run clear when rinsed through a fine metal colander.

  2. While rice is soaking prepare all ingredients listed above.

  3. Once rice is rinsed and ready to cook, return it to the cooking pot. Add coconut milk, broth of choice, butter and any seasonings you would like to add. Bring to a boil. Reduce heat and let simmer for 20 minutes. Stirring every few minutes. Rice cooks better when it is left alone to cook in the steam in the pot.

  4. While the rice is coming to a boil, mix together soy sauce, water, red wine vinegar, sugars, garlic and ginger in a small sauce pan over medium heat. Stir with a whisk until sugar is dissolved.

  5. In a small bowl, whisk together 2 tbsp of warm water and cornstarch until it is completely dissolved.

  6. Heat sauce of medium high heat, slowly stir in cornstarch. Simmer until thickened. Remove from heat and set aside.

  7. Once the sauce is started, heat oil in a large high sided skillet over medium high heat. Add diced onions and cook until soft.

  8. Crumble ground turkey and garlic in pan and cook until the turkey is 1/2 way cooked. Then add the carrots, broccoli and red bell pepper. Cook until turkey is fully cooked and the veggies are softened.

  9. Pour sauce over turkey mixture and simmer over medium heat for 5-10 minutes to combine flavors.

  10. Spoon meat and sauce mixture over coconut rice. Garnish with onions and serve immediately.
