11/2 TikTok Cooking Live-Instant Pot Balsamic Chicken & Veggies

Servings: 4-5
Prep Time: 20 minutes
Total Time: 1 hour
Ingredients:
6-8 Boneless Skinless Chicken Breasts trimmed of their fat
Sea Salt and Pepper to taste
Juice of one lemon
chopped parsley (for garnish)
2 tbsp Italian Seasoning
4 tbsp Extra Virgin Olive Oil (EVOO)
4 tbsp Balsamic Vinegar
3 tbsp Butter
2 tsp Cornstarch
1 tsp Garlic Powder
1 tsp Onion Powder
2 cups Chicken Broth
1/2 pound of carrots chopped to bite size pieces
1/2 pound of baby potatoes halved or quartered depending on how you like it
1/2 pound of asparagus
Instructions:
Marinate chicken in Italian Seasoning, salt and pepper and 2 tbsp Olive Oil (season to your taste). Marinate for at least 30 minutes for best results marinate overnight.
Press sauté on the Instant Pot and add oil to pot. Let it get hot.
Cook Chicken on each side 4-5 minutes. Once browned remove to a plate. You should do this in phases.
Melt butter, stir in garlic, lemon juice, and balsamic vinegar. Deglaze the pan and cook for 1 minute.
Add chicken broth and Italian seasoning to instant pot.
Add chicken, layer carrots and potatoes on top, season and close and seal pot
Pressure cook manual on high for 4 minutes.
Naturally release for 10 minutes, then quick release.
Remove chicken, potatoes, and carrots to a serving dish and cover with tinfoil.
Press Sauté on the pot and bring sauce back to a boil.
Add asparagus and cook in juice for 5-10 minutes depending on your taste.
Reserve 1/2 cup of liquid and mix well with cornstarch.
Add back into pot and boil for 2-3 minutes to thicken into gravy
Spoon sauce over chicken/veggies and garnish with parsley.
Serve and enjoy!
